Looking for a good appetizer for dairy meal on Monday. Main course is likely salmon, along with blintz soufflé, salads, garlic knots, kugel. Best I've come up with so far is fruit salad. Other ideas?

You can do plain Greek yogurt with strawberries and sugar...it tastes like sour cream and strawberries and is healthier.

Do you really need a separate appetizer course? Unless it's soup (or a fish course when serving a meat meal), I don't see the need. Especially if you're planning to serve salads with the main.

caprese salad: layer sliced tomatoes, fresh basil and fresh mozzarella. drizzle with balsamic vinegar and/or olive oil
