When people talk about making a protien (chicken for example,) stretch further, and say to make a stir-fry with veggies....
which vegetables are you using? I use onions, mushrooms, peppers. But broccolli/cauliflower are probably just as expensive since I buy bodek.
Zuchinni makes the mixture very watery (am I wrong?) and potatoes is not a "vegetable."
Other ideas to stretch suppers/ make supper cheaper?

stretch with carbs: rice, pasta, potatoes.
Potatoes get a bad rap, but they are actually good for you if you don't overdo them.

Tomato, eggplant, baby corn, bamboo shoots, water chestnuts, cabbage.
Btw regarding vegetables making the stir fry watery, you can add a little cornstarch or flour to water and mix it well and add the mixture to any sauce to thicken it.

Do you use soy products like tempeh or tofu? There are great balanced vegetarian menu's out on the web and if you like it spicy go to YouTube and watch some of Manjula's Indian cooking.
