I've googled, but all that I find are
1) cakes or cookies either decorated in blue and white and/or made to look like chanukiot or dreidels
2) Jewish confections that I don't associate with Chanukah, like rugelach, lebkuchen, sweet noodle kugel, bread pudding made from challah, I wonder if someone randomly selected Jewish recipes
3) more ways to fry things
4) dairy desserts (which also seem somewhat random rather than anything traditional)
Does anyone have any non-fried desserts that are actually traditional on Chanukah?

Cheese is traditional, as per Yehudis and Helifornes.

line up 8 cups of yellow jello & a 9th one a little higher in the middle!
great centerpiece and not fried :-)

Baked doughnuts on Chanuka?!?! Sacrilege!
The whole reason people eat donuts on Chanuka is BECAUSE they are fried in oil, to remember the neis of the oil.
I'd think cheesecake is a MUCH better choice to commemorate the holiday.

So do a baked donut recipe that has olive oil in it. Problem solved!

Here's a baked sufganiot recipe that looks awesome; just like the real thing. I didn't try it, but I'm planning to bake these at some point over Chanukah. I'm going to tweak it a bit and use whole spelt flour (hope it won't flop), a healthier form of sugar and skip the rolling it in sugar step.

As oliveoil mentioned above, you can use chocolate coins.
Chocolate coins can dress up any dessert and make it apropos for Chanuka. You can serve mousse cups or trifle, for example, decorated with a coin at the top.

Couscous Sucre "Seffa" from The Book of Jewish Fodd by Claudia Roden p. 505-506. I have made this for Hanukah parties in Japan when I didn't have much dairy. It was served in Morocco with milk or buttermilk on Hanuka.
1 lb couscous
1/2-1 t salt
4oz btter or 6T neutral flavored oil
1 T cinnamon
3T confectioner's sugar
3/4 c raisins or sultanas boiled in water for ten minutes to plump (optional)
Prepare couscous with oil and salt. Mold in a cone shape and sprinkle with sugar and cinnamon and raisins. There are other variations in the book.

This is basically what I do for Shabbos Chanukah. I make chocolate cupcakes. Each one is decorated with a swirl or vanilla cream, a dash of blue and white sprinkles and topped with a chocolate coin.
