It's been in the fridge a week

I have a portion of stir fried chicken, veggies and rice that I put in the fridge last Monday do you think I could eat it or should I chuck it?

Smell it
If it smells fine then reheat with some water and bring it to a boil

Chuck it. Chicken doesn't last that long in the fridge. It might smell fine but still be dangerous.

I would eat it
We eat food shabbos to shabbos I there is leftovera

It's very "ify". A week IMO is too long for any certainty over its safety. It might be OK but it really depends on many factors, among them how long the chicken was out before refrigeration, the temperature in your fridge, the salt content in the chicken (salt acts as a preservative), how well it was wrapped and how thoroughly it was cooked.
In this case there is also the possiblity that one of the vegetables in the stir fry has turned.
I don't think it's worth the risk - certainly not for one portion.

rice has spores that can make you sick if you aren't careful and leave it out for too long right? I think refrigeration slows the process, but a whole week sounds like it's being a bit risky. I'd toss it. A week seems a bit long for chicken as well.

I'm all for eating leftovers and not wasting food, but this combo sounds dangerous to me, for all the above reasons. Too many ingredients, too many things that could go wrong.
