I'm making challah and I accidentally put double the yeast that I need. I rather not double the whole thing. I already started adding some flour. What should I do now?? Would it be crazy if I just left it, or should I start over?

Just leave it. It will rise faster, of course, which means the flavor won't develop as deeply, but the bread will be fine.

the flavour will be very yeasty ... but it will work fine enough
if you've added more flour - what about liquid ratio additions
