Hazelnut Crunch or Candied Nuts

I'd love to make this for pesach as a topping for ice cream.
Does anyone have a no fail method to make sweet nut crunch easily?
It would really make our Yom Tov.

I make candied nuts on Pesach.

We boil our sugar before Pesach, so I use sugar water.

1) Put sugar water into small pot and let boil.

2) Add chopped raw nuts. I've used walnuts, almonds, and hazelnuts.

3) Stir constantly, the water will evaporate and the sugar will candy the nuts, and they will also roast while you're cooking it.

4) Have someone take them far away from you or you will eat them all yourself.

I never had a bad batch, some were more dark/roasted, others were lighter, but they were all heavenly.

Amother Green, it sounds heaven as you say. Just one question. Do you use different types of nuts in the same mixture, or each nut in a different mixture to create different kinds of candy?
Also, how much nuts to how much sugar water?

I do one type of nuts at a time, but can't think of a reason why it wouldn't be bad to mix them.

I never measured, some batches had more sugar water than others. It all evaporates at the end so it makes no difference, just takes longer and the nuts will be sweeter. Smile

Maybe about equal amounts, say a quarter cup of sugar to a quarter cup of nuts? But also makes a difference how concentrated your sugar is, so my guess is that it's a very flexible "recipe"!

I think there are official ratios, but I just use my medium size pot (4 qt?), fill it halfway about with water and pour in about 4lb of sugar, then boil until it's dissolved.

This IS a real cook. A bit of this and some of that NEVER comes out good for me. Only for someone who can measure with the eyes.
