Most recipes do call for farmers cheese (together with cream cheese and egg yolks). Do you want to use ricotta cheese?

If you don't like the texture of farmer chease just use a hand blender

Twoisacharm posted this filling in the past, but I don't know how to link her post. I haven't tried it.

1 container of JJ whipped creamcheese
1/4 container of JJ sour cream
sugar - taste til its good but about 1/4 cup
can add vanilla sugar if u like the taste (I dont)

shmear the cheese mixture thinly (but not too thinly) over the pancake then take twosides turn them inwards (towards each other) then roll the into a blintz shape (like a burrito) taking the unrolled side and rolling it towards the other unrolled side

U can use whipped cottage cheese or blend cottage cheese with hand blender.

I just use cottage cheese, cinnamon and sugar. Sometimes an egg, not always.
