I recently saw a new company put out oat challah. it was like $3.50 for a tiny loaf. because oats dont have gluten they dont rise like regular flour. I have a friend that has a recipe and you need to also add xantham gum in order to help it rise. I dont think it tastes especialy good either. I have baked with oat flour because of food allergies and find that it doesnt have a good texture like wheat.

Sometimes I combine flours. Out of 14 cups of flour I might put 2 cups of oat flour and the rest a mix of whole wheat and spelt.

a grain, one of the 5 that we would make an al hamichyah on (wheat, barley, oat, spelt, rye), its veryy low gluten and very easy on the stomach. It comes in whole and white flours.
