-make a face? using marshmellow fluff/ toothpicks to keep the stuff on- like raisins, nuts (possibly problamatic), m&m like candies, sour sticks (for mouth, or hair) etc.
-or make a basket? cut off top 1/4 of fruit, using spoon, empty out the fruit part inside, fill with other dried fruits, etc...
-or make a flower? cut fruit in half using zig zag cuts (so each half has kind of like triangles circling it), take skewer, wrap in green tape for stem, maybe stick some other tu bshvat fruits on it, and there u have it- a beautiful flower!
these r the only ones that pop into my mind right now. if I think of others, ill let you know
good luck and have fun!

I like imokay's first idea but I would use only dried fruit for the face, not candies so its all tu b'shvat-y.

dont u know? u can always use candy! candy is the anytime-is-good type of food.
youre hungry? candy. youre grumpy? candy. tired? candy.
its for any occasion too. try it. once u start u get addicted.
im gonna get some right now!
