I made a big chicken soup yesterday it was taken off the stove around 6:30 pm... but then got left out all night.
What would you do with it?

How cold was your house? If no heat was on and you live where it is winter now, I would think its fine. If not, probably sniff it and go from there.

I'm afraid it's spoiled.

What did you do with it?

People lived without refrigeration for thousands of years.

But maybe their homes were colder.

Depending when my soup finishes, I frequently leave it out to cool overnight before putting it away.
Why don't you smell/taste it- it's prob fine

I also sometimes leave it out overnight to cool off. But that's when I take it off the stove late, more 11pm-12am, not 6:30.

Also depends on house temperature. If it's room temp-warm it's most likely spoiled, if it's rather cooler there's a bigger chance it to be good.

No, they did not. They had a fire in the house.
Refrigerators are much more of a recent invention than heating.

They also kept live animals, because live meat doesn't spoil.

And they would pickle, smoke, dry, etc, to preserve food.

They had cool cellars to make veggies last longer.

But I don't think they just left to meat out...
