A for effort! My husband hates tomato stuff bc of the heartburn. But thank you. Also you can freeze rice? Won't it be super hard?

The above ideas are good.
Something my mother made growing up that we all liked was diced tomatoes and mixed it into cold rice and dressed with a mayo dressing (probably mayonnaise, salt, black pepper and vinegar). We were always hoping for leftover rice so she would make us this rice salad.

I find that long grained rice (jasmine, basmati) freezes better than short grain.

Sushi salad. Lettuce, rice, avocado, shredded carrots, cucumbers and either Kani or flaked baked salmon. Top with spicy mayo/ teriyaki sauce and crispy onions.

when I make rice in my steamer, I always fill it up so I can keep some in the freezer.
you can even tuck some under the chicken for friday night!

Stir fry with vegetables like carrots, potatoes, or colored pepper which takes faster to be ready. Add small cubes or shredded chicken. Spice as you prefer.
I usually add a bit of chicken soup instead of oil. Start with the chicken and vegetables that take longer to cook. Add the rice last so it doesn’t mush.

That reminds me of a recipe for a meat knish that calls for mashed potatoes or cooked rice. While I like the potatoes better the rice works quite nicely too.
