Following! I tried a few recipes over the last year and they were all too dry. I like that really sweet, moist type from bagel shops.

Here is the recipe from Spice and Spirit

1 1/4 cups flour
3/4 cup yellow cornmeal
1/4 cup sugar
4 tsp baking powder
1 tsp salt
1 cup milk (I use parve)
1/3 cup oil
1 egg

Preheat oven to 400 F.

Grease muffin pan or line with cupcake holders

Mix dry ingredients in large bowl. In a second bowl mix wet ingredients. Add wet to dry. Stir until just blended. Mixture will be lumpy.

Fill muffin cups and bake 20-25 minutes

Variation: half fill with batter. Add 1 tsp raspberry jam to the middle. Top with more batter.

Just made a batch for breakfast with jam in the middle. it tastes corny. I think next time I'll add more sugar. I've only had one corn muffin in my life, so that's what I'm comparing it to. I may have overbaked it. The half that I made with the jam are better than the half without bc there's that added sweetness.

This recipe from The Complete American-Jewish Cookbook has a recipe for cornbread that's very soft, sweet, and cakey:

1cup sifted all purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup sugar
1/2 cup yellow corn meal
1 cup milk
1 egg, well beaten
1 tablespoon melted shortening (oil works fine)

Basically, mix everything and bake.

Personally I prefer my cornbread with less flour, less baking powder, less sugar, more fat and more cornmeal. But the recipe above is still delicious.

Thanks for all your responses. I am looking for a recipe that people have tried and can say it comes out like the bagel shop corn muffin. If any of these taste like that please let me know.
