Everyone is home before lunch, one dairy restricted, any ideas for easy and nutritious? I feel like I am so busy with shabbos/yontif I always forget this and often have simple unbalanced meals.
These are some of the ways food comes out.
Peanut noodles with cut up peppers for veg
Dairy pasta, restricted on their own for finding something
Shabbos food, opps

Prepare tuna and egg salad the day before and serve with rolls. Let everybody help themselves. Put out baby carrots and grape tomatoes so no slicing needed.

I toss frozen pizza in the toaster oven most weeks.
Alternatively, sandwich bar (cream cheese, egg salad ,tuna etc veggies and bagels.
Big pan of scrambled eggs and bread and veggies.
Pasta. Seperate out some and put cheese on some.

Erev Shabbos is what cereal was made for. I feed my kids good nutritious meals 3x a day all week, but not Friday. Friday they know they are on their own until Shabbos. Cereal and PBJs are popular.
When they were smaller and unable to help themselves I just made larger pots of chicken soup and let them have chicken soup (loaded with chicken and veggies and noodles or knaidlach) all day long.

I think what you are serving is totally fine. If you want to serve something more substantial could make a big pot of soup like red lentil or split pea or vegetarian chili with baked potatoes

OP, all of this. Or have tuna prepared and they can have it on crackers with vegetables.

This is what I save some of the food box items for. There are things like knishes, frozen pizza, frozen fries sometimes we get deli meat. Its not always stuff they want to eat at school or I want to serve for dinner so erev shabbos is a great time for it.

I make extra big kugel for Erev Shobbos.
Although that may not be ready till later afternoon.
Maybe a yogurt before.

My DDs MIL serves 2 ,9x13 pans one with rice and one with peas. The peas are seasoned with salt and all spice-lightly baked in the oven
Super easy just dump all ingredients a little oil and heat through
Everyone just serves themselves
I do baked ziti - thursdays Iāll make 2
Or
Egg and tuna salad
Toast with avocado mashed
Melted cheese in the microwave
Cottage cheese
Cereal
Rice cake and cream cheese
And they can always take a whole easy fruit apple, cutie, banana, etc
Erev Shabbos or Yom Tovis not the time to think that meals might not be balanced
BTW- when planning my YT menu I first plan erev YT meal first
For Erev Shabbos Erev Pesach Iām planning brown rice pasta some with cheese and some plain, sauce on the side , and Iāll buy 2 bags of classic salad, because I donāt eat pasta

Thanks I guess it is more the fact that I forget lunch until everyone is hungry, and the lack of poise I feel more than end results, like this week made a smaller pack of chicken for shabbos, everyone was hungry and ate it for lunch so I ended up having to run and thaw something new to cook for the sudah!
