There is a pizza shop in Kingston, PA.
(570) 234-2220
It's only open certain days and hours. Need to call ahead.
I actually know someone looking into opening a kosher grocery closer to Mount Poconos.

Went there a few years ago and was told by a rav of a camp in the area that I trusted that the kashrus was good (obviously you have to do your own research).

Only Kingston kosher-pizza on sundays 22-8 and Thursdays 5-8.
Meat at a different location Tuesday 5-8.
I heard that lake como pizza is open this summer. But that's about it that I know of.
There's a kosher food truck in Allentown.
