I have done scrambled egg "muffins" that you can take in a muffin cup, usually with some pretend meat or cheese inside. I've frozen them without problem.

We usually do a scrambled egg and a slice of cheese rolled into a tortilla. You can make them ahead and freeze them, and then take it out the night before (or not!!), microwave it, and take it. My kids like them with ketchup, DH and I prefer hot sauce, but it's good for protein and quick! And yummy!

Blend a yogurt with fruit the night before and in the morning, they can sip it on the way to school.
