I have always left a burner on. however, I make sure to do three things:

1. cover with a blech when not in use, especially since I have small children around

2. leave a kitchen window with a decent-sized crack so there is air

3. check it first thing in the morning, in afternoon, and before going to bed

What kind of stove do you have? If you have an older oven/stove with a pilot light and no electric start up, you may be allowed to turn the gas on when you need the flame. Turning it off may be more complicated though, so ask a rav. We just asked today about ours and the rav said we could turn it on and off if it was for the immediate sake of the food - which practically means that you can't really turn it off.

In the past, I've left the oven and one burner on, covered with a blech.

Don't do anything without checking with the manufacturer of your stove. You don't want to take any chances with your family's safety.

this isnt the first yomtov I've done this. I'm leaving one burner on, and a hotplate with a timer for warming food.

Ditto Tehilla. A blech is a good idea.

my gas stove is fairly new, and it comes with a safety feature that if the flame goes out, the gas does too. Yours may do the same.

What brand/model do you have? We still need to buy a decent stove and I would really that feature.

It is a neff. can't see a model number, but it is a 4 burner. 2 rings are regular size, one is small and one is big.
