We make ours with baked apples because we have a child who is allergic to raw apples. This year we're at a hotel and requested non-apple charoset expecting more of a Sephardic kind made with dates. They gave us one made with banana and one that was basically walnuts in silan.

doesn't it sit on the pesach plate during the seder?

A minscule amount sits on the seder plate but when it's time for maror I bring it out from the fridge. We don't actually eat anything on the seder plate. It's symbolic.

The seder plate items go in the trash at nirtza.
