dont use barley now cos not achar pesach.
used shredded potatoes last week to thicken it but dont like taste esp when cooked overnight.
can I put in shredded carrots or it wont do much to thicken -will it dissoved/disintegrate?

You can use quinoa, but it does taste differently than barley.

good idea but dont think will go. use it for other things but wouldnt for cholent.

Rice is delicous, my grandmother has celiac and she makes a rice cholent and we all end up loving it too.

Rice is very good in cholent.
When my child was on a gluten free diet I used to make it with beans and rice.

I never heard of needing “after Pesach” for an actual unprocessed grain product like barley, only for things processed with grains like cereals, pasta, farfel, cookies and obviously bread. Are you sure that’s your minhag? If it is, would you be allowed to use rice which isn’t one of the five grains? Rice makes a pretty good cholent.

Personally I use brown rice

You can just leave it out. I do it many times without barley, it comes out delicious. Put just enough water and it will become nice and thick

another vote for brown rice. Someone taught me this a few months ago and my cholent is even better. I usually put brown rice and barley together

Use short grain brown rice or white sushi rice. It's round and gives that nice texture very similar to barley. (The regular brown rice kind of busts after cooking so long and isn't enjoyable in cholent/won't give you the texture you're looking for). Just use less water for short grain brown rice, that what is used for barley.

Theres a difference between regular brown rice and short grain brown rice. The short grain is the kind you want in the choulent. You won't be able to taste such a different from barley
