It does seem weird but at the end of the day it’s just oil eggs and salt. I once needed sour cream in a parve recipe so I swapped for mayo and it actually turned out amazing.

Some do and some don't so be careful. I think refrigerated does and shelf stable doesn't, but check that, we haven't used it in a while because my allergic child can't have peas either.
