I am going to my mother in law for shabbos and making salads but she can't have oil or sugar. What Salad ideas can you think of. I need full recipes

Lately, my favorite salad is a super herby coleslaw. Think of it as parsley dip + cabbage.

1 head of cabbage, sliced thinly
1 bunch or 1/2 of 2 different of your favorite herbs (parsley, cilantro, dill, etc)
3 cloves garlic
2 tbsp lemon juice or vinegar
salt + pepper

Blend everything except the cabbage in a blender and pour over cabbage. Best if it sits for a couple of hours before serving. You can also add sliced almonds.

I don't normally make this using amounts, so taste and adjust to your liking.
