I've been married for 20 years bH and make challah all the time.
For some reason, the last few batches haven't risen well after shaping.
I would have thought in this heat it would rise really well.
The first rising is fine but they come out of oven way flatter than usual.
I opened a new yeast ( I use dry) because I thought that was the problem.
Any suggestions???

It still could be that yeast was old…

Either the yeast or the flour? I found when I tried using a cheaper flour, it didn't work as well. Or if the yeast was old.
Equally if your kitchen is hotter than usual, your dough may be rising more, and therefore won't rise as much afterwards.

Flour is great value but I always use it. Yeast has expiration 2025.
Don't think t kitchen is hotter than usual. We have central ac.
Wondering what is going on.

Turn off the central while the challah is rising or put them in a prewarmed oven to rise.
For some reason the a/c ruins the challah rise

Switch to a high gluten bread flour, make sure the yeast is proofed before adding other ingredients. Don’t add salt until the dough is slightly coming together and sticky.

Humidity
I don’t find heat to be a problem, but rain and/or humidity is a challah killer.

That makes a lot of sense. We live in a city with very humid climate right now.
Just don't remember it happening in the past. I did let them rise when braided in the garage. Maybe that killed them.
Thanks for this. Wonder what to do...still a while with this humidity

For some reason the a/c ruins the challah rise | Any draft wind or AC isn't good for any yeast doughs. Yeast soughs should be left to rise well covered in a warmish place without wind draft or AC.

Made challah today with heimish brand flour as opposed to great value flour and they came out amazing. After months of them not rising properly.
I'm assuming it's not a coincidence...
