5 eggs, separated
1 1/2cups sugar
half cup orange juice
half cup oil
Rind of I lemon
1 tsp. vanilla extract
1.5 cups flour
1 tsp. baking powder
USE: 9-inch tube pan
YIELDS: 1 cake
Preheat oven to 350°.
In a medium mixer bowl, beat egg whites, gradually adding ¾ cup sugar. Beat until stiff but not dry. Set aside in refrigerator.
In large mixer bowl, beat egg yolks, remaining ¾ cup sugar, orange juice, oil, lemon rind, and vanilla until thick and light yellow. Beat in flour and baking powder.
Gently fold in egg whites with spatula. Pour into ungreased 9-inch tube pan.
Bake for 40 to 45 minutes. When done, immediately invert on soda bottle. Cool at least 3 hours. When cool, loosen edges and remove cake from pan.
