Anyone have one you can make in the oven?
Also does it freeze well?

Slice zucchini and onions and place in pan. Pour marinara sauce over all. Bake about an hour. Covered.
No idea if it freezes well. We rarely have leftovers and it's an easy dish to make erev shabbos/yomtov.

Kinda but the one I'm picturing just has onions and sliced zucchini. No other veg.

I slice and saute onions and 2 garlic cubes. Then add diced zucchini with a beef tomato tomato sauce black pepper sugar and salt. On medium flame for 20 minutes. Freezes well. Yum!!

I do the stove top version and it freezes well.
Sautee sliced onion and thin half circles of zucchini with the peel on. Add a couple of cans of tomatoe sauce as needed . Add onion powder liberally , salt to taste and a drop of brown sugar . Simmer covered on a low flame stirring every few minutes.
