Need a dairy supper idea for diabetic

I dont want chicken for supper because of yom tov and tired of it.
My husband is diabetic so looking something he could eat but not fish (tuna is ok)
Im sick and cant think of anything creative right now so I could use some suggestions.

Niçoise salad with tuna steak or a scoop of tuna and a lemon-grette (with green beans, I don't know if a few baby potatoes are allowed).

Roasted long eggplant slices made into lasagna with layers of sauce and cheese.

Frittata with a large leafy salad.

Red cheese salad- mix farmer cheese, sour cream with paprika, spices, you can also add in red onions.

diabetes friendly food doesn't have to b e creative. it needs to be healthy and filling. if your dh wants chicken, why not make enough for him for 2 nights and a different dinner for yourself for 2 nights? that's what I do.

you want to take a plate and half of it is vegetables. 1/4 of it should be protein and the last quarter a carb. it's not complicated.
