Oven baked crispy schnitzel

Hi,
How do I make schnitzel in the oven come out moist and crispy without it drying out? I am trying to avoid frying for now to save calories...

I do it all the time, I spray with pam and it usually comes out fine. some crumbs don't come out as good (like pretzel crumbs or chunkier ones)

I spray oil on crumbs and bake on convection roast uncovered.

It won’t taste like fried schnitzel at all. It’s like store bought pizza vs homemade. Both are good but very different

I made really good air fried schnitzel last week. It was golden and crispy. You can probably use the convection setting for the same effect.

I used boneless thighs because they don't dry out, coated in egg, seasoned breadcrumbs and everything bagel seasoning and lots of spray oil. Air fried on 400 until they looked brown and crispy. Everyone liked it a lot.

The key is to not crowd the pan. Make sure each piece is very separate from the piece next to it.

Not so healthy but I smear mayo (and mustard) over schnitzel before dipping in breadcrumbs. The mayo keeps it soft and it doesn't dry out.
Also the dinner done has a great recipe where you mix oil, spices and breadcrumbs in a bag with small pieces of schnitzel. Comes out great as well.
