Frozen Meals for a diabetic

I need ideas for lunch meals that can be frozen and popped into the microwave. Low in carbs and sugar

Are they picky?

Any veg “kugel” - you can melt cheese on it if you like
Basically any veg - shredded or corsly ground in the processor
Eggs
Spices
You can do the same with sliced or cubed zucchini

Leftovers from dinner

Protein & Veg sheet pan meals
Chicken
Sliced roast
Pulled beef
Salmon
—————————-
Broccoli
Cauliflower
Carrots
Eggplant
Then mix and match

Not very picky. I would like to do a full meal and should be very appetizing. I did make some vegetable patties but looking for more ideas.

Stews and braised meats freeze really well as individual portions.

Dark meat chicken freezes better than white meat chicken. Boneless thighs with the skin removed is a good choice

I don't know what the difference is between lunch and supper? Are some foods not lunch foods?

I eat protein plus salad for lunch, so for a freezer-friendly meal, I'd do some protein cooked in a liquid (or no sugar sauce) plus cooked veggies.

A meal of dark chicken (baked with spices) plus cooked broccoli or cauliflower would be ideal.

I would make the meals carb free and then the person could choose to add a carb like a slice of bread, tortilla, or fruit if s/he wants.

Also - choose low-carb veggies; no potatoes, sweet potatoes, butternut squash, corn, beans etc

I wouldn't do patties. those are held together with flour or potatoes or someting carby. prtein and vegetables or a good meaty soup.
