Don’t know why but since ta’anis Esther is on Thursday I stupidly thought I could give a MM with a shabbos theme.
Ie wine, challah. But Purim is on Sunday. 🫣
What can I bake with my challah dough other than challah ?
Or what should I do instead ?

You can do something about leap year/skipping forward to shabbos
Or use your challah dough to make small rolls and give with tuna, cc, guacamole, or other dips/spreads

You can give Challa. I love getting homemade Challa. We eat it at the seuda. That’s the first thing from mm to disappear. Other foods we get for the seuda like kugels and crumbles usually end up leftover.

Give them all out on Friday, and then give two people two things on Sunday?

I think onion rolls are perfect, and they make a good lunch either that day or the next day. Just take the color dough and add onions and maybe some spice.

I'd be happy with fresh challah to stick in the freezer.
Onion rolls are delish. So are garlic knots.

We once did a Shabbos leftovers theme when Purim was on a Sunday. Everyone loved it!
You can do the same!

Can you shape the challah as a hamentash so it’s more Purim and less shabbos ?

Morrocans have a tradition to add hard boiled eggs to challah dough before baking for purim seudah. Thet refer to this as עין של המן - haman's eye

Two ways;
Put onions in microwave. Place onions in container and seal it with bag/clingfilm. Microwave for a few minutes until translucent. Make challa dough into a little square add onions on top sprinkle with salt and pepper and bake.
Sauté onions. Make dough into circle, add onions, cut it rugelach style roll it, egg it and bake.
