DH's learning partner always gives a small homemade challah roll, small grape juice and a hamentash.

Morrocans have a tradition to add hard boiled eggs to challah dough before baking for purim seudah. Thet refer to this as עין של המן - haman's eye

What's this quote from?

Are you asking for a source for the minhag? I don't really know. All I know is that I have received such challahs from moroccan neighbors...

My aunt always used to give challah and wine, and we used it at the Purim seudah.

Roll out the dough and fill with a mixture of chopped onions with olive oil, salt and a little poppy seed. Either roll the dough into a log or pinch into a hamentash.
No need to cook the onions before, unless you prefer them caramelized.
