I have heard that some people bag k'zeisim of matzah prior to the seder. I assume this is to avoid guessing what is a kzayis in the moment....? How is this done exactly?
Also, for the seder itself, how much maztah should I get per person?

We bought a scale and dh has a sefer that lists the weights. Put portions in bags and labeled them. We only did it once, just wasn’t worth it for us.

We did it by my parents.
Erev Pesach using scales we measured the kezaysim for each person and put them individually in food bags.
There was a bag for matza, marror (measured lettuce )and koreich. It was put next to my fathers seat And he would add in a piece from the 3 matzos.
We were a Seder of 15-20 people so it saved alot of time

I guarantee you someone somewhere has a chart for this. I think Kedem or one of the other major wine companies used to make one for the 4 cups at the seder.
All else fails, can you check with someone who makes or sells matzah from one of the matzah bakeries?

My father’s done this for at least 20 years. So much quicker than waiting during the Seder. He uses a chart and puts the correct amount into ziplock bags. He makes adult sized ones and child sized ones. So much less waste. Less time wasted and less mess.

We use a scale reserved for matzah only. With 10-13 person sedarim this saved a ton of time during the Seder. Matza is weighted and put in a bag: matza, korech, afikoman marked on the bag - for each Seder separately. My husband just needs to add a small piece to each bag and pass.
It's time consuming for the person making the bags, but is totally worth it at the Seder.
