There is a recipe of a tempura shnitzel, you make a batter, dip the shnitzel and fry.

Coat with only eggs and nothing else, ground nuts, Almond flour, shredded potato or sweet potato, when fried becomes a crispy crunch, (latke batter, not a healthy option) diced onions and fry like that.
You can bake for healthier option or fry in a healthier oil

Instant mashed Potato flakes all year! I don’t dip it in egg, just rinse with water and dip.

Plenty of honey always being sold with hechsher for Pesach, especially in chareidi areas.
