Never thought of that. But once I left chili overnight and it tasted very cholenty, more like cholent with ground beef instead of chunks of meat. I don't konw if I'd do it again though.
Sounds like an interesting idea, I'd also like to see how this would come out, maybe I'll try it if I have left overs from dinner, I'll just leave the pot on the plata utnil lunch.

I think that liquid would dry up and would possibly burn.
but if there is a way, wow, thats great and probably yummy:)

I'm not so sure, I'd say make a double amoung of sauce and see what happens. | ill explain why I think so. when I made meatballs once, I put it on a LOW flame to cook and did not watch it nearly enough and the liquid was completely gone after a while. a plata is like a low flame, maybe even higher than that. and I did put more liquid in to the pot. it did not help.

I do it all the time. If there's enough sauce it's not a problem. The sauce DOES thicken, but doesn't evaporate.

What about in the crock pot instead of the plata?

We do it all the time. We somehow frequently wind up with 4 or 5 extra kids for Shabbat lunch, and meatballs are a relatively inexpensive food that they'll eat. Just make sure they're in a lot of sauce.

Would a sweet and sour sauce work or do you think the sauce would taste strange?
