Veggie stuffed omlette
serves one

eggs
tomatoes
peppers, any
onion
mushrooms

You cut up a onion and sautee it. You add a diced pepper, a small tomatoe, and a few mushrooms. Salt and pepper to taste. Transfer veggies to plate when soft.

Wipe out skillet, and add your beaten eggs - either egg whites or a combination. When set, top with your veggies and fold, sliding into plate. Top with Parmesan.
