What do you mean by professional?
I use a 8" chefs knife and I love it. To be honest it freaks out most of my friends, but I don't usually have help in the kitchen so I don't have to worry about people cutting themselves with my massive knife.
By the way, it needs sharpening on regular basis.

this is almost exactly my knife, only when I say 8", I mean the length of the blade.

if ur grill is used for meat and is therefore fleishig, how do u make a fish recipie that calls for a grill? do u use a grill pan? how does it work?

We scrub the surface of the grill and leave it on high for about half an hour to burn off any residue from meat.

I use the knives from tupperware (maybe bc I sell it...??!!!) but they are amazing!! and dont need to be sharpened often. really worth it.
