my husband started a diet that consists of protien and veggies only.
Does anyone have to share recipes for cooked vegetables so I can make for dinner
I need a few diff ideas so I can make something different every day.

I am on the same diet, I make veg. cutlet, ill take either mixed veg. or frozen brocoli, I add heaping tb. lite may. and I spray the pan, I bake the cutlet, yum, I also add sauce on top.
if I want to do it for milchig next to fish, ill make a cutlet real flat, and add slice of tom. or catsup on top and right before serving I put slice cheese on top.
or ill put some frozen mix like italian in micro dish, for about 10 min. then ill add some splenda 1 ts. may. salt, black pepper. good luck

roasted vegetables
root vegetables (parsnips, turnips)
bean salad
beets
Not sure if these are allowd, because they're starchy.
snap peas
sweet potatoes
corn salad
Which of these do you and dh like?

Cooked broccoli, califlower, spinach, or stir fry-all come in frozen bags.
Squash in tomatoe sauce
Israeli salad
cut up veggies

Stirfry.
The trick is to cut up all your vegetables in advance and add them in order of cooking time, so for example I will do carrots - 4min, zucchini 1-2min, fresh corn - 30 secs, broccoli, add sauce straight away, mushrooms.
You can make a whole meal out of it by frying meat/tofu first before the vegetables (take it out while you do the vegetables).

Cauliflower is a good substitute for potatoes, it works well mashed to replace mashed potatoes, or in salads.
Roast vegetables
Sauted onion, eggplant and mushrooms
Stuffed mushrooms
Stuffed zucchini
Stir fried cabbage - cook until it's just done
Edamame
Zucchini and/or eggplant in a tomato sauce (ratatouille)

spaghetti squash (top with meatballs and sauce, a vegetable sauce, or olive oil and salt)
baked butternut squash fries
baked carrot fries
zucchini alfredo
portobello mushroom pizza

Baked vegetables:
3 packs frozen sliced carrots
2 squash (peeled and cut in half moon slices)
4 red pepper (thin strips)
4 yellow pepper (thin strips)
1lb sugar snap peas
I can mushroom
1/2 cup oil
sugar (a drop if u want, I dont add it)
1-2 garlics (I use the frozen ready crushed)
some soy sauce (according to how much you like I add quite a bit)
bake on 400 for 4-5 hours (can bake less depending on how soft you like it)
This freezes very well thats why I like making the whole recipe.

Here it the recipe, from Old Young. (You should quarter the recipe - it makes a ton. Use 2-3 zucchinis, 1 Tbsp butter, 1 small clove garlic, 2 oz. cream cheese, 3 Tbsp milk, and 2 Tbsp parmesan cheese.)

Lentil salad (best done with brown or green lentils, boil for 25min or so till soft but not mushy.
dress with soy sauce, balsamic vinegar and ground pepper. )
Roasted beetroots (Scrubb, top & tail. Wrap the whole bulb in foil without peeling. Bake till it's soft)
Roasted parsnips (Scrub, peel, cut into matchsticks. Toss with oil, salt & pepper. Bake till it's soft/golden).
Roasted vegetables (courgettes, peppers, purple onions, aubergines)
Roasted carrots (peel, slice thick diagonally, coat with a bit of oil/salt, cinnamon or cumine optional.
Bake as above.)
Broccoli in garlic oil (boil broccoli. Sautee chopped or sliced garlic with oil and salt, pour on broccoli)
Green beans (boiled, served with dip, or do the garlic oil as above, or lightly dressed with soy
sauce/tehini dressing)
Baba ganoush (I don't use mayo. A bit of tehina, lemon juice, onion soup mix or salt)
Cooked carrot salad
Sweet and sour celery/carrots
It really depends on what you get locally and what vegetables are in season...
