a/o have recipes for muffins - dairy or pareve? I'm looking for recipes with cinnamon and/or chocholate and/or raisins n' carrots.

I posted a carrot cake/muffin recipe a very long time ago, search for it if you scroll way down. it actually says it was posted by recipe.
I also have a great apple oatmeal muffin recipe in which I reduced the sugar by half and it still tastes great. I can post it if you want when I have a chance. you can pm me to remind me.
I also have a blueberry dairy recipe which is delicious.

Here you go, 2 for the price of 1!
Carrot muffins:
3/4 Cup sugar
3 eggs
3/4 Cup oil
2 Cup flour
2 1/4 tsp. baking powder
3/4 Cup chopped nuts
1 Cup Raisins
1 Cup shredded carrots
1 lemon rind grated
mix it all up bake @ 350 for about 25-35 min.
Can make it as a cake in a tube pan bake for 1 hr.
Bannana Muffins (these are amazing)
3 banana's mashed
2 C. flour
1 C sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 C oil
2 eggs
1 tsp vanilla
1/2 C whit chocolate chips
mix by hand bake @ 350 for 15-20 min.
***** you can substitute craisins for chocolate chips and that's nice, use only 2 bananas and a 1/4 C milk.
I like to substitute half of the oil for applesauce in my baking and I don't see any difference - healthier!

These are a "plain" muffin recipe, but with peanut butter swirled through. You eat them hot, so it's melted and drippy, and totally delicious.

oatmeal muffins:
1 1/3 cup oatmeal
1 1/3 cup flour
2 eggs
1/3 cup margerine
1 1/2 cup milk/soy milk
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup craisins (optional)
1/2 cup raisins (optional)
bring oats n milk to a boil, add eggs and marg
mix dry ingredients, add wet stuff
bake for 15-20 min 350 degrees

mmm my family loved those bannana muffins they were so easy and quick to make I made them forty minutes before shabbos next I want to try the carrot muffins. we all like carrot cakes so this should be a treat.
