Homemade Macroons
from the Joy of Baking online
Chocolate Macaroons:
4 oz cut up chocolate (chips are easiest)
3 egg whites
1/4 cup cocoa powder
3/4 cup sugar
pinch salt
1 tsp vanilla, optional
2 1/2 cups coconut, sweetened is fine (I assume you can use shredded fresh coconut but I have not tried this yet)
You melt the chocolate. In separate bowl, whisk the egg whites, cocoa, sugar salt and vanilla. Stir in coconut and melted chocolate. Let sit in fridge until firm, about an hour.
Preheat your oven to 325 and line 2 baking sheets.
Place small mounds - about a tablespoon each - on baking sheet, a few inches apart. Bake about 15 minutes or until shiny. Makes 2 dozen.
For regular macaroons:
2 eggs
1/2 cup sugar
pinh salt
1 tsp vanilla, optional
3 cups sweetened shredded coconut (disclaimer, see above)
Whisk egg and add your sugar, salt and vanilla. Add coconut, making sure that it is completely moistened.
Place small mounds - about a tablespoon each - on baking sheet, a few inches apart. Bake about 15 minutes or until shiny. Makes 2 dozen.
To "guild the lily", as it were, you can dip these into chocolate for scrumptuousness - cool the macaroons after baking. Melt a little chocolate and dip half of each macaroon into the chocolate. Store in fridge.

how can I make the second without coconut?
I don't want to whip any eggs whites

shredded fresh coconut put on a pan in the oven as low as it goes overnight works well.

my macaroons came out awesome!
3 egg whites
3/4 C sugar
beat these two together until stiff
fold in 2 cups shredded coconut, 1/4 C matza cake meal, and a pinch of salt. (batter will be thick)
drop by TBSP on parchment lined baking sheet
bake at 325 for 18-20 minutes.
I drizzled on chocolate and they were so yummy!

Thanks for the recipe. Just made these (the chocolate ones) for chag tomorrow and they came out great (especially hot from the oven - yummmmm).

A recipe from my kids school cookbook:
200g (1pkg) shredded coconut
3oz/75g sugar
1 tbsp potato starch
2 eggs (I made it 2 eggs plus 1 eggyolk as I had a spare yolk from meringue)
1 teasp vanilla extract
Beat eggs in a large bowl, add vanilla extract. Mix all other ingredients and blend well. Preheat oven to 160C. Line a cookie sheet, make small mounds of coconut dough. Bake for 20-25min, till the top looks nicely browned. Cool. It's super easy and good for making together with children.
