Persian Meatloaf
I have not tried this but it's form a library book that I have to return, so I'm typing it out here, so I can try it soon.
Meatloaf:
oil
2 cut up onions
2 cut up cloves of garlic
2 lbs ground beef, chicken, turkey or fish
apple, grated
5 T ketchup
3 t Worcesthershire sauce (non fish)
1/4 cup fresh tarragon or similar
1 tsp cumin powder
1 tsp cayenne
1 tsp pepper
1/2 tsp baking soda
1/2 cup bread crumbs or similar
2 beaten eggs
Filling:
1/2 cup chopped parsley
1 grated carrot
2 hard cooked eggs, optional
Glaze:
1 T ketchu p and 2 T sugar
You preheat your oven to 375 and heat oil and sautee onion and garlic. Let cool. Mix meat and ingredients and place half in 9 by 6 loaf pan. Add the filling and put the rest of the meatloaf mixture on top of it, bake for about an hour.
