I am making the easy Tzimmes from the purple lubavitch cook book. It says to simmer for 30 minutes and I simmered it for more and even put the fire higher but they are not getting soft . Any ideas?

I guess keep on cooking it until they do get soft. How thick did you cut the carrots? Did you try one, is it hard to the bite? eventually they have to get cooked

I hve made different kinds of tsimmes in my life, and def, over the years, foudn that cookbooks do not give the real story!
You might try cutting them up next time, or cooking them separately.
I do a sweet potato/carrot thingy, and def. give the swet potatoes a head start! No matter what the recipe book says!

I just finished making my Carrot-Pinapple Tzimmes.
It came out really soft and delicious!
I cooked it for over 2 hours.
