My husband needs to be off white flour, and he hates whole wheat desserts. Anyone have really great no-fail recipes for whole wheat desserts? Whole wheat cookies that are soft? something? anything?

I use whole wheat a lot.
Apple crumble - 3 cups whole wheat flour, 1 1/4 cup sugar, 2 sticks margarine. Sprinkle apples with cinnamon and sugar.
Chocolate chip cookies - the soft ones in Binah's spice it right cookbook (with vanilla pudding) - substitute all flour for whole wheat. I also use only half the margarine, and rest (or 6 tbsp instead of 8) oil (use 8 if you want them really chewy) and only the brown sugar - just skip the white.
Also, these chocolate chip cookies, with whole spelt or whole wheat http://www.nunweilersflour.com.....okies (and I skipped the raisin step).
I make my regular banana cake recipe with whole wheat flour instead.
The granola bar recipe on this site http://imamother.com/forum/vie.....+bars with all whole wheat flour (and skip regular sugar).

I find that anything with a strong flavor masks the whole wheat taste. So in rich chocolate brownies or cakes, I just substitute and people barely notice (the finicky will notice but quickly get used to it.) I subbed whole wheat in a cinnamon coffee cake type recipe once and you totally couldn't tell. Blueberry cake/muffins could probably accomplish same. for cookies I think no flour is a better bet than whole wheat flour (except maybe in chocolate cookies, maybe the flavor covers up the whole wheat.) Try a recipe based on oats rather than flour, even if the recipe has some flour in it if it's little enough it won't really matter that it's whole wheat - BTDT.
