I baked a pickled corned beef 1st cut brisket in a 250 degree oven for several hours but it came out tough and rubbery. It usually comes out soft and delicious. Did I overbake or underbake it? Or was it just a bad piece of meat to begin with?

You probably underbaked it. How many hours is several?
Also, what did you bake it with?

I think you underbaked it. I usually first cook in simmering water for around 2½ hours, then slice, put in sauce and bake at 350 for another hour.

I baked it for about 4 hours. Guess it wasnt enough for a big piece. Anyone have a delicious sauce for it?

4-6 lb. pickled corned beef
1 c. light brown sugar
1/3 c. ketchup
3 T. apple cider vinegar
2 T margarine, melted
1 T mustard
