I am trying to get into healthy baking.
Does anyone have good recipes of cakes that they have tried & taste good with ingredients such as whole wheat flour ,whaeat germ ,bran molasses etc?

I usually use Whole-Wheat Flour instead of regular White Flour.
And - Canola Oil instead of Margarine.

Sometimes I add: Wheat Germ, Ground Flax Seeds, Ground Sesame Seeds, Sunflour Seeds, Pumpkin Seeds etc... to cookies and muffins.

I just use regular recipes, and they come out really good!!!

A couple of recipes from Spice & Spirit that I substitute as described above (applesauce for oil, whole wheat flour):
oatmeal raisin cookies
muffins (I add 1/2 to 1 c blueberries and also reduce the sugar)

I think I posted a recipe for whole wheat pumpkin muffins in another thread.

My kids really like these breakfast bars, I sub whole wheat flour:

Breakfast Fruit Bars

Recipe By : Austin American Statesman 9/14/94
Serving Size : 20

1 1/2 cups uncooked oatmeal
1 cup flour
1/2 cup brown sugar, packed
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup orange juice
1/4 cup vegetable oil
1 egg -- lightly beaten
1 teaspoon vanilla
6 ounces diced dried mixed fruit
2 tablespoons oats

Combine 1 1/2 cups oats, flour, sugar, cinnamon, soda and salt. Combine juice, oil, egg and vanilla and add to dry ingredients. Mix well. Stir in fruit. Spread into a 13x9 inch pan that has been sprayed with no-stick cooking spray. Sprinkle with remaining oats. Bake at 375 for 20-22 minutes or until lightly browned and edges pull away from sides of pan. Cool completely. Cut into bars. Store tightly covered. (Bars may also be frozen in individual bags. Thaw at room temperature or microwave on high for 30 seconds per bar.) Makes 20 bars.

The problem is really the sugar in all these recipes. Eggs and oil and whole wheat flour are healthy choices, but white or brown sugar is still very bad for you...I find it hard to use other subsitutes, like honey, maple syrup or molasses, cuz it gets expensive...

I'm sorry, it was a bit tongue in cheek. I don't bake "healthy"; we eat fruit for snacks.

Unless you call a apple crisp hjealthy - I dont', it has a lot of margarine. Or a pie - has white flour and sugar and eggs.

How about baked apples? Or poached pears? Or applesauce with strawberries?

Regarding all the sugar in regular recipes, I usually put in less sugar than it says in the recipe.
For example - Yesterday, I baked these amazing chewy-oatmeal-cookies (with orange and lemon rind), and instead of 4 cups of sugar (double recipe), I only put 3.

When I make muffins I put about 1 cup for about 30 muffins.

For the sugar I use apple juice concentrate it works great. I even tried apple cherry and my cake had a chocolate cherry taste to it and it was delish.

A freind of mine gave me a great idea:

Health food stores have great organic parve muffin mixes. I usually add frozen fruit, nuts, oat bran, craisins, eggs, w.w. flour, apple sauce to the mix and its great!

I baked cookies with applesauce instead of marg. and made it into a cake and it came turn out a little sticky but still yummy.

Chocolate Moose in response to your post yes we should eat fruit as a snack, but some of us really crave baked goods and if we are going to eat them they might as well be as healty and low fat as possible.

Nana, I don't do it that way. I find it's easier to keep granola bars in the house and cereal for breakfast. Not muffins or croussants or Danishes. Fruit for snacks.

Cake or ice cream is for yomtov or Shabbos or a simcha. ONLY.

But please give people the benefit of the doubt - maybe they are asking for healthy recipes in order to bake for "shabbos or yomtov or a simcha. ONLY."

we also love desserts.
I dont think fruit pies and crisps are so bad for you.
(homemade crust and topping made with whole grain flour, rolled oats, healthier fats etc.)
last week I made from scratch a lemon mereing (tried 5 times to spell that right...)pie...half of it is just egg whites but it looks like a lot!
I make the classic apple cake (purple cookbook) with whole grain spelt flour (I'm sure you can use whole wheat) and it is ALWAYS a hit.
I made whole grain chocolate chip muffins and substituted half the oil with applesauce and they were also a big hit. We have also made whole grain brownies (you would never guess).
For sugar I have substituted, date sugar, honey, maple syrup. I'll bet overripe bananas would also work for some (haven't tried it yet..)
I think what it comes down to is just experimenting to find out what your family will like. (or let you get away with....)

Blueberry Oatmeal Muffins


2 cups oatmeal
1 cup spelt flour (I use whole wheat)
1/2 tsp baking powder
1/4 tsp salt
1/2 t sp ground cinnamon


Wet ingredients
1/2 cup rice dream
1/2 cup oil
1 egg
1/2 cup maple syrup or honey
3/4 cup fresh or frozen blueberries - or raisins.

preheat oven to 375

combine dry ingredients in large bowl and mix
in another bowl combine wet ingredients
add dry mixture to wet mixture and mix only until all flour is moistened.
spoon into greased muffin tins or cup cake holders and bake for 15- 20 minutes.
