I'm not a big freezer person and own only a regular fridge/freezer. Which is the course you cook first (freezes best) and which do you only make fresh?

I only have one oven so I first cook my parve stuff (cakes, kugels, etc). Then I do my soups. Mains and veggie dishes last

I'm cooking in this order iyh:
Chicken Soup
Compote
Chicken Roast for 1st day
Veal slices for 2nd day.
freezing it all.
Then I'm squeezing lemons for juice, making ice cream, and cucumber salad.
ze hu.
During the actual seudos I cook the potato side dish - whether it's french fries or mashed potatoes or paprikash potatoes etc. potatoes dont freeze well.

Soups and meats freeze best. I usually start with the main courses because they're the most important- I can get by without dessert or that extra side dish, if I'm pressed for time...

My plan for Sunday is:
Pepper salad and artichoke salad (buying a new crockpot so I need to make these first to keep them pareve)
Preparing raw meatballs
Preparing chicken with artichokes and potatoes
Soup
Chocolate truffles
I'm sure more will end up on the list as the days go by.

Mains first because they take the most time. While they cook, I can make lots of stovetop stuff and food processor things. Then I can prep the sides to go in next because several might be able to bake at once at same temp. Last I do desserts since I want them freshest.

Soups.
Roasts.
Freeze awesome!
I make side dishes of potatoes and vegetables fresh.
Same with fish but I make recipes that last a bit longer in the fridge, so I make them before the side dishes.

The first thing I do is make and freeze 12 dozen chocolate chip cookies. If I'm lucky, there will be enough to last.
Then, I make and freeze brownies, and the first soup. Today, I tried making yodells, and fried and froze almond schnitzel.
Tomorrow, I will make and freeze some sorbet, meatballs, and a kugel. I haven't decided too much else, but will probably do some fish and some chicken soup for both shabbat hagadol and yt. Monday will be reserved for the brisket, lettuce checking, and veggies that I want to make fresh.

whatever freezes well and I have the ingredients. I made 17 kg of potatoes into kugel yesterday. Plus some cakes and cookies. I also freeze soups and some meat dishes. Eg chicken nuggets freeze well but not whole chicken peices. (imo)

Desserts and kugels I make in advance and freeze. (I voted dessert because they're so much fun!) Soups, mains and other sides I make fresh.

Dessert first - I find it uses a lot of the same ingredients that won't need to come out of the cupboard again after.

Especially for pesach, I cook the baked goods first because the oven is clean and kashered, so everything will be pareve.
