Yes I KNOW I could probably find something by googling but I just would rather ask here Twisted Evil
We'll be using almonds because we have allergies to just about every other nut.
What else?

making 1/4 of this recipe now

Charoses - Etty Deutsch
6 apples, grated
1 cup walnuts, finely chopped
1/2 tsp cinnamon
2-3 Tbsp sugar
1/3 cup sweet red wine

Place the apples and walnuts into a large bowl. Combine the cinnamon and sugar; sprinkle over the apples. Stir in the sweet wine.
Serve immediately, or refrigerate before serving.

just sub the walnuts for almonds.

(1 1/2 apples, 1/4 cup nuts, 1/8 tsp cinnamon, 2 tsp sugar, 4 tsp red wine)

my mother makes the yummiest charoses. I don't have an exact recipe but she mashes a banana adds grated apples, nuts, wine and pureed dated dates. it's really delicious.

Persian:
1 C. walnuts (probably just add more almonds)
1 C. almonds
1 C. raisins
6 strawberries
1 C. pitted dates
2 apples, cored, peeled, quartered
1 banana, cut up
½ C. sweet wine
1 tsp. cinnamon
¼ tsp. pepper
Process in food processor.

You can also skip the dates, and just do apples, nuts and cinnamon.

We do it slightly different. Instead of the sugar, add 1/2 cup of chopped dates or date spread.

we just do ground nuts, grated apples and wine. Everyone loves it. Never thought to add sugar.

I am allergic to apples, so our charoses is dates, banana and filberts. Before we were able to find undried dates and when we had nut allergies in the house our charoses was mashed bananas. Very Happy

Liba, have you ever tried organic apples, which cost a fortune (24 shekels a kilo!)? Just asking, because DH is allergic to avacado and bananas, until he tried organic ones. Apparently, it's the pesticides used on those that he is allergic to.

Then again, I've got a child who gets a rash on her face from eggplant, no matter organic or not.

DO you not cook the haroset?

I have never made it before so I picked a random recipe to make. It required cooking for 1 hour.

I just throw my ingredients in the food processor and blend. Smile I don't measure, cook or cut. I do pit and check the dates though.

Must whine. My family hates charoset, Hates, hates, hates. No matter what recipe I try. I use friends' "oh my gosh, I need to make gallons of the stuff, everyone loves it so much," recipes, and my family is practically counting the minimum number of molecules they need to (grudgingly) consume. This year, I bought a jar or charoset. Yes, a jar from Rokeach. If everyone is going to hate it, it might as well be easy on me. I'll let you know how it is.
