How do you make vegetarian stuffed peppers? (No ground beef) And also without tofu- I think dh would faint.

you can stuff the peppers with raw rice. in a bowl, mix together raw rice, chopped mushrooms, grated carrots, corn (and anything else you want......you don't have to use what I used) and spice it up with chopped garlic and chopped onions (or powdered) salt and pepper, cumin. cut the tops off of the peppers and stuff them with this mixture 3/4 of the way. put the peppers in the pot, put the tops back on the peppers, fill the pot with water or chicken/vegetable broth or water. bring to a boil and cook the peppers on a low heat for around 45 min or until the rice is cooked. you can also add ketchup or tomato paste to the water so the peppers wiill have a nice tomatoey sauce.

I do mushroom, onion, and teeny bits of green and red pepper. no carrots or corn. also, taste the sauce. it's really good when you add sugar...
