I use grain brain white whole wheat flour with rav gruber's hechsher. my dayen told me to sift as much as I could, and check the brown stuff that doesn't go through the sifter by hand, and if you don't see bugs, you can use it.

King Arthur Flour is excellent. They have "white" whole wheat which produces a wonderful challah - not dense at all. Most of their products are kosher.
