I have this all the time. We are friends with this single guy who always comes over and we always have single girls coming or also married women with their kids come when their husbands are out of town .
I would just tell the single guy before shabbos what the situation is so he wont think he is getting set up.

Oops, you're right.
In that case, I am stumped.
If men and women don't talk to each other so much in your circles, then yes, invite at least 1 man so your DH has smeone with whom to peak. OTOH, can't he speak with you or your children (if you will be occupied speaking with your guest)?
