There was a really good sounding meat manicotti recipe a few weeks ago in Ami's Whisk.
Does anyone have the recipe? I remember it called for canned tomato soup, but don't remember the rest.
Please post if you have it.
TIA!

Filling:
1 lb ground meat
1 egg
3 T. ketchup
1/2 c corn flake crumbs
1 small onion, grated
1/2 t. salt
1/2 t. paprika
1/2 t. garlic powder
Dash pepper
1/2 can tomato soup
1 box manicotti
Sauce:
1 (15 oz) can tomato sauce
1.5 cans tomato soup
1/4 c sugar
1 t. garlic powder
Dash pepper
1/2 cup water
Preheat oven to 350. In medium bowl, combine filling ingredients. Stuff manicotti one at a time and place in baking dish in single layer. (If freezing, do do at this point).
Combine sauce ingredients and pour over manicotti. Make sure sauce reaches in between all the manicotti. If necessary, add some water to corners of pan.
Cover and bake 1 hour and 20 min.
(You can assemble and refrigerate til ready to bake, up to 24 hours.)
Healthy version:
Cut zucchini in 2. Remove stems and core. Stuff with meat, cover with sauce and bake.

Sounds awesome. Do you cook the manicotti beforehand?

It's long tube-shaped pasta.

OP here
Thanks so much! I kind of forgot about this - and now someone posted it.
YUM! Can't wait to make it. The only kind of tomato soup I could find was tomato-rice. I hope that doesn't kill it.

debs | I think you should go with a canned tomato soup substitute.
