Help everybody! I'm having company for next Shabbat (the 15th, so I have time to think), that are vegetarian and one is attempting to go gluten-free. I'd like to have at least one gluten-free main item, so he can have something there to eat.
It can be dairy, I don't want to serve fish because there's no good way to keep that for Shabbat lunch, I don't think, unless I do cold salmon which I don't particularly like.
Stir-fry tends to get soggy and mushy.
Ideas oh wise amothers??????

Cold pasta salad with gluten free noodles or asian rice noodles. Quinoa dishes (tons just google). Any veggie or bean salad. You could make a vegetarian chulent with rice instead of barley. Portobello, roasted pepper stacks. Roasted sweet potatoes.
Just do all your usual vegetarian sides but make sure there's some sort of protein (I.e. quinoa or beans)

Quinoa pilaf made with assorted veggies
rice pasta with pesto sauce (made only with frozen basil cubes, salt, pepper and olive oil. Add pine nuts if they can eat that.. It's very yummy!
big salad bar. I make that almost every week and people always tell me they can't believe there's a main course after it. Anyway, it looks very pretty (assuming you can clear a counter/table off) and everyone can choose exactly what they want/can eat.
You sound very nice to try to accommodate them!

Thanks! I think I'll do at least a quinoa dish, does anyone have one with protein, like tofu? Or is the quinoa considered the protein?
Do you have a recipe for the pesto dish? Thanks!

You can do a baked tofu.
