What can I do with it? I grated a bunch to use as topping for a salad or garnish on a plate but I have too much.
Any way to make as a salad on its own? Anyone have a good recipe for raw grated beets?

Delicious raw like this:
Grate some raw carrot and/or colorabi, mix with fresh cilantro or parsley, dress with lemon juice and olive oil. One of my favourite Pesach salads...
