stuffed with kishka (let me know if you want recipe)
marinate in fresh garlic, olive oil and salt, then bread with cornflake crumbs, spray and bake.

Anything you'd make with breast meat, except dark meat pieces tend to be smaller and more irregular, so I personally wouldn't recommend trying to stuff them.
But they're SOOO much juicier and more flavorful than white meat!
Stir fry
Curry
Shnitzel
Marinated and grilled/broiled

Marinate in oil and spices- than grill using grill pan!! Absolutely delicious!

There was a basil marinade in the Yated recipe section a few weeks ago that I tried with dark chicken cutlets and came out delicious. Dont' have it on me right now but if it interests you I can dig it up.

Same as you'd make with white. And it'll taste better because dark meat tastes better than white.

Anything!! just like reg cutlets. In fact whenever I make cutlets or chicken stew I only use dark chicken. Its soooo much more tasty. The only thing is, u have to cook it longer.

It makes a REALLY juicy shnitzel - you don't need to fry it - you can bake in the oven and it's so soft and juicy the kids will think it's fried (in my house, "real" shnitzel is fried and they only want that kind) This tastes "real".....and it's baked in the oven.

Here's how I do it - so simple
Whisk lite mayo and fat free italian dressing
Dip cutlets into that mixture
Dip cutlets into a mixture of panko crumbs and seasoned corn flake crumbs.
Spray pan with pam.
Put in pan
Spray top of cutlets lightly with pam
Bake at 350 for 15 minutes.
Turn and bake a bit more, just to crisp up other side.
YUMMMMMM........
